Crockpot Tuscan Soup
Great creamy soup with sausage, potato, and kale. I prefer to add a little extra cream to thicken it. Serves six. 790 calories per serving.
Ingredients
- 1 lb Spicy Italian Sausage
- 8 slices Bacon, diced
- 4 Large russet potatoes, cut into 1/2 inch chunks
- 1 Medium yellow onion, diced
- 1/2 bunch of Kale, torn into pieces
- 1 cup Heavy Cream
- 2 cloves Garlic, minced
- 32 oz Chicken Stock
- 2 tbsp Flour
- 2 tbsp Olive Oil
- Salt
- Black Pepper
- Red Pepper Flakes
Recipe
Prepare a 6 quart crock pot.
Heat oil in a large skillet on medium high. Cook sausage until browned, breaking it into small chunks, and drain liquid. Add onion and garlic and cook until the onion is translucent. Add the mix to the crock pot.
Add potatoes and chicken stock to the crock pot. Add water as necessary to cover the potatoes. Cover and cook on high for 4 hours.
Whisk together heavy cream and flour until will mixed. Add cream and kale to the crock pot, cover, and cook on high for another 30 minutes.
Add bacon. Season according to tastes, and serve.
