Roasted Garlic Feta Asparagus
A good asparagus recipe. Pairs well with the garlic glazed salmon. Makes six servings. 152 calories each.
Ingredients
- 2 lb Asparagus, trimmed
- 1/2 cup Feta Cheese, crumbled
- 1/4 cup Olive Oil
- 4 cloves Minced Garlic
- Juice of one lemon
- 1 tsp Dried Oregano
- 1/4 tsp Red Pepper Flakes
- Salt
- Black Pepper
Recipe
Preheat oven to 425 degrees.
Add the oil, garlic, lemon, oregano, and red pepper flakes to a small saucepan. Heat on low and stir until the garlic starts to become golden. Remove pan from heat and cool for 10 minutes.
Toss asparagus with infused oil until well coated. Arrange asparagus in a single layer on a baking sheet. Toss feta evenly over the asparagus.
Roast for 10-12 minutes, until the desired tenderness is reached. Add salt and pepper to taste.
