Spicy Crockpot Chili
A tasty crockpot chili. Serves 12, 275 calories each. Maybe try white onion instead of yellow?
Ingredients
- 5 slices Bacon
- 2 lb Ground Beef Chuck
- 1 lb Italian Sausage, hot
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1/2 cup Celery, thinly chopped
- 1 cup Yellow Onion, diced
- 2 Jalapeno Peppers, diced, with seeds for extra heat
- 2x 28oz Diced Tomatoes
- 2x 15oz Chili (Pinto) Beans, in medium sauce
- 15 oz Chili (Pinto or Kidney) Beans, in medium sauce
- 6 oz Tomato Paste
- 4 tbsp Chili Powder
- 1 tbsp Dried Oregano
- 2 tsp Cumin
- 1 tsp Dried Basil
- 1 tsp Salt
- 3/4 tsp Pepper
- 1 tsp Cayenne Pepper
- 1 tsp Paprika
- 1 tbsp White Sugar
- 1 tbsp Worcestershire Sauce
- 2 tbsp Minced Garlic
- 3 Beef Bouillon Cubes
Recipe
Prepare a 6 quart crock pot.
Cook bacon on medium-low until crisp, retaining grease in pan. Remove bacon to a paper towel.
Sautee bell peppers, onion, celery, and jalapeno in bacon grease on medium until tender. Add the mix to the crock pot.
Cook beef and sausage in the same pan on high heat, until no longer pink. Drain off fat and add the meat to the crock pot.
Add three cans of chili beans and tomatoes, undrained and not rinsed. Add all seasonings. Crumble the bacon and add to the crock pot as well.
Cover and cook on low for 6-8 hours.
Optionally serve with cilantro, sour cream, or cheddar cheese.
